Not knowing what the depth is, but liking the length you would have for each, it sounds like a viable option.

60cm depth, 100cm height and 180cm width, that would be sideways each would have half of that with a divider until they decide to live in piece then they can have the whole 180cm

I guess you are thinking that you would give them a vertical divide so that they are side by side, instead of a horizontal and having one over top of the other? Vertical is better, the size comes out a little small with that, so it's kind of a toss up. On the one hand you have cage cara that is smaller than we recommend, but they can be side by side, see and interact with one another, and hopefully grow into a better relationship. On the other hand, you have one above the other, in a cage that has great length and running room, but setting them up for the degu on top to have dominant position and therefore greater potential of more heated interactions.
Just ran the numbers, and the cara is the same no matter how you arrange the divide, so the better choice then is to have a vertical divide so that they can live side by side. Hopefully they will decide to get along much sooner than later.

That was the plan or to create bit where they have half the width of it slightly longer making a weird
l_ ..l
^ sort of shape so they get the length to run around (if that makes sense)

That's good, didn't know how to describe it, but least that way they are in a controlled meeting area, easy to swap stuff like bedding, sand, etc... and they can't touch each other. Also in case of tail biting might put a small perspex barrier around the bottom. Seeing the first fight stripe had a bite on his tail
Also wanting to get them both a big hamster ball so they can come out and explore together while we clean without having to supervise them all the time

I would make your dividers like a double glazed window without the glass. If you make a wooden frame, and put wire mesh on both sides, there should be enough space to avoid finger nips, tail bites etc without perspex

Please don't get a hamster ball for them, they are extremely cruel. Could you instead divide a playpen for them so they can be out at the same time?

At this point of time we don't have a play pen they just come out in the spare room, and with most of the resources I have going into converting the wardrobe for them I won't have enough to do a playpen for awhile

Don't worry - quite a lot of our goos don't get a daily run out of the cage (only weirdos like me with no life). This is why cage size is so important. Your goos are going to have an amazing home, and *fingers crossed* they will think it so amazing that they forget why they ever fell out!
