I recently bought my degus a large flying saucer wheel for the playpen. It says that it is suitable for degus but they don't seem to understand that it is a wheel. Do my goo's just need some time to get used to it or is it worth getting a different wheel.

Some degus don't really get flying saucers, but leave it there for a while and they might figure it out. You can try luring them on with a treat and then move the treat to a position where the wheel moves when the degu goes for the treat. Do they already have a normal wheel?

They have a wheel in their cage (from tic tac wheels); which they enjoy but I bought the flying saucer to keep them busy in their playpen.

I would have given the same advice as Moletteuk has already done. Hopefully with time and enticements they will learn what it is and does. There are, however, degus that just . . . don't. LOL! Mine fell into the "don't" category. (EYE ROLL) I would say that it can be as simple as a personal preference. Some people like to walk, some to run. Some that like to run prefer to run outdoors, and others prefer to use a treadmill, while others want an indoor track. Let them get to know what it is and become familiar with it. There are those on the forum that have done what you have done, and their degus ignored the saucer for months and months, and then one day one began running on it. The others watched . . . interest was piqued! Before long they were all enjoying it. BUT . . . it was ignored for AGES. It isn't always that way, but you won't know if you don't give them time to get there. Then again, they could do what mine did . . . they chewed it to bits!

OMGoodness this is exactly what i was planning to post about today, the girls love their wheen but its noisy so we are trying a saucer, its been in a week and they havent sussed it out and seem really grumpy that teh wheel is not in there.

about 45 degrees, gave in and put there normal wheel back in this evening

I so know how you feel!! Like I said . . . my goos just ATE the thing. No ambiguity about their feelings in my case. And I gave them months to figure it out.

The angle is really critical, it needs to be shallow enough that they can grip on the surface, but steep enough that it turns freely under their weight. It might be worth experimenting with altering the angle, if possible. If it really is 45 degrees that would be too steep.
