Hi all! I just bought some fresh ginger for cooking and have way too much, does anyone know if it would be safe for my goos to try? They probably won't like it but was just wondering! Thanks

If you have a freezer, you can cut it into thumb sized chunks, and then double bag it to freeze. Then when you need, want, some ginger in a dish, take it out and grate it while it is still frozen. If grates VERY well this way, you get nice consistently small pieces and have less risk (at least I do) of adding skin to the mix this way as well. This way, your ginger stays fresh and plump, too, instead of shriveling up in the fridge.

I always freeze my ginger. Grating it is so much easier and it stays fresh for ages.
