This may seem crazy, but I have never seen my degus asleep. Is this normal? Are they probably just sleeping while I'm also asleep? If they seem to be sleeping and I walk up to the cage they start moving straight away. I'm not worried about them I just find it really strange

Are you goos relatively new? If they are it will take them a while to get comfortable. Our used to do this but now they just sleep where ever when ever they want.

I think they have a sort of scale of asleepness and can nap with their eyes open, or at least it appears that way with my degus. I suspect yours may be asleep if you are seeing them resting snuggled together, but they are hearing you as you approach and waking up. Mine frequently go from napping piled in a heap to running away at ultra high speed instantly.
I've never seen mine laying on their backs with their feet in the air like you see pics of some degus.

I often see them napping with thier eyes open, which I guess is normal ? I've only had them about 3/4 months so maybe I will be able to see them actually asleep after they get more used to me?

This is normal. I have never actually seen them nap with their eyes fully closed!

I think it can also depend on the group of degus you have. Within my females, there were about six that would stay in their pile and only slightly adjust when we found them sleeping. Yet within the same cage there were a couple of other groupings where they would run off about 10 - 15 cm and look at you until you moved away. Then they would either go back to sleep or get involved in something else. The large group that stuck together changed when we rehomed a couple . . . the whole group of girls in there was so big that there were only 4 that we could identify . . . anyway, they became more vigilant and the group was smaller, so I can only assume that the female that made them most secure must have been chosen for the new home. So . . . guess I am saying it is a group/leader/personality thing that seems to contribute to their degree of eyes open/sleep on back/pile or scatter tendencies.
Totally simply and straight forward!!

I find mine don't use the nest box at all but they love there hammock with pieces of fleece blanket to snuggle in

Same, mine love to sleep in their hammock. Its very comfortable and is lined with furry stuff, so I always see them there whenever they are having a nap.
